Sfogliata Napoletana Salata

A golden square puff-pastry tart topped with cherry tomatoes, mozzarella, black olives and basil

A rectangular puff-pastry tart topped with cherry tomatoes, white mozzarella, black olives and basil on a wooden board

This is the dish you make when people are coming and you have fifteen minutes. Two sheets of ready-made puff pastry, stacked one on the other for a base that stays crisp instead of going soggy under the topping — that is the one Neapolitan trick worth knowing here. On top go halved cherry tomatoes, torn mozzarella, black olives and a heavy hand of oregano, and into the oven it goes until the edges puff up golden.

It lives in the same world as the parigina and the bakery rosticceria, and it has a street-food cousin: the sfogliatella salata, which takes the shell shape of the famous sweet sfogliatella and fills it with savoury things instead — sausage and friarielli, ragù, or ricotta and salami. At a party in Italy this tart is almost always on the table, cut into squares, somewhere between an antipasto and something you eat standing up with a glass in your hand.

Why two sheets Stacking two sheets of puff pastry gives a sturdier base that holds the juicy toppings without turning to paste underneath. Fold the border up to make a rim and the tomatoes and their juices stay where they belong.

Recipe — Sfogliata Napoletana Salata

Serves 4–6 · 15 minutes prep · 30–40 minutes baking

1
Prepare the tomatoes. Wash and halve the cherry tomatoes. Sprinkle lightly with salt and let them drain a few minutes so they do not flood the pastry.
2
Drain the mozzarella well and tear or dice it — excess water is the enemy of a crisp base.
3
Create the double base. Lay one sheet of puff pastry on its paper, brush lightly, and place the second sheet on top.
4
Form the border by folding the edges up and over to make a raised rim all around.
5
Add the toppings — tomatoes cut-side up, mozzarella tucked between, olives scattered over.
6
Season with oregano, a little salt and a thread of olive oil. Add basil now or after baking.
7
Bake at about 180°C for 30–40 minutes, until the pastry is deep golden and puffed at the edges.

The variations are all about the cheese and the cured meat: smoked provola and Gaeta olives for a more Campanian version; sausage and friarielli baked inside for something heartier. Vegetarian as written, and genuinely better at room temperature an hour later — which is exactly why it is buffet and picnic food.

Quindici minuti, una teglia, e la festa è pronta.
