Torta Ricotta e Pere
Italian comfort in every slice — creamy, fruity, irresistible
A soft, fragrant cake where creamy whole-milk ricotta meets sweet ripe pears. Two pears diced into the batter; the rest sliced into a fan or spiral on top. My mother made this for breakfast and for any occasion that called for something simple and beautiful. Always better the next day.
The ricotta and pear cake belongs to the category of Italian home baking that requires no occasion — it is made for a Sunday morning, for a midweek afternoon when there are ripe pears that need using, for any moment when a slice of something good and not too elaborate is the correct response to the day. My mother made it the way she made all the breakfast cakes: starting early enough that it was ready by the time we came to the kitchen, the apartment already smelling of lemon zest and warm ricotta, the cake on the counter cooling under a dome. The pear slices arranged in the spiral pattern on top were characteristic of her — she did this precisely, each slice overlapping the previous in a tight fan, the top of the cake looking more considered than the twenty minutes of assembly it required.
The ricotta is the structural foundation. Whole-milk ricotta — drained, beaten smooth with the sugar — produces a batter that is richer and more tender than a standard flour-and-butter sponge, with a slightly dense, moist crumb that stays soft for two days at room temperature. The potato starch in the recipe reinforces this texture: starch gelatinizes at a lower temperature than gluten proteins develop, meaning the cake sets gently and stays moist rather than firming into a dry crumb. The pears diced into the batter become almost invisible after baking, their presence felt as occasional soft pockets of sweetness, while the sliced pears on top caramelize slightly against the batter's surface and create the visual identity of the cake. The lemon zest is the fragrance that ties everything together.

La ricetta — for a 22–24 cm tin
Dust with powdered sugar before serving. Perfect with a cup of coffee or tea. Keeps well at room temperature under a cake dome for 2 days, in the refrigerator for up to 4 days. Even better the next day — the ricotta settles, the flavors deepen, the pear pieces become softer and sweeter.
Buona colazione — e aspetta il giorno dopo.
